Recipe

Amy gave me this recipe the other day that she had gotten from her sister Allison, and I have already made it twice. It is so good!

Mediterranean Orzo Salad

1 cup orzo pasta
1 can (2.5 oz) black olives (I bought chopped)
1 cup diced red bell pepper
1/4 cup crumbled feta cheese

Dressing:
1 packet Hidden Valley Ranch dressing mix
3 tbsp olive oil
3 tbsp red wine vinegar
1 tsp sugar
1/2 tsp dried basil

Cook orzo according to the package directions omitting salt. Drain and rinse with cold water. Mix orzo with olives, red pepper and feta cheese. Whisk dressing mixture. Stir dressing into the pasta. Cover and refrigerate 2 hours.

(Add grilled chicken to make a meal)
